Mexican Buddha Bowl

This meal is an absolute winner – super tasty and super nutritious. Don’t be afraid to get creative with this dish guys, feel free to add any veggie, salad or carbohydrate foods that you desire.   Serves 8 – 10

Ingredients

Mexican Bean Sauce:
  • Olive Oil
  • 200g chopped mushrooms
  • 2 x 400g cans of lentils (rinsed & drained)
  • 1 x 400g can of black beans (rinsed & drained)
  • 1 x 400g can of kidney beans (rinsed & drained)
  • 2 x 400g (cans of diced tomatoes)
  • 1 cup of passata (pasta sauce)
  • 2 tsp Mexican chilli powder
Tomato Salsa:
  • 1 x 400g can salt reduced corn (rinsed & drained)
  • 1.5 punnet of cherry tomatoes diced
  • 1/2 red capsicum diced
  • 3 spring onions sliced thinly
  • 1/4 red onion diced (optional)
  • Generous squeeze of lemon/lime juice
Guacamole:
  • 2 ripe avocados mashed
  • small amount of red onion - finely diced
  • small amount of red capsicum - finely diced
  • 4 cherry tomatoes - finely diced (remove seeds)
  • juice of 1/2 a lemon
  • pepper ( as much as you like)
  • 4 heaped tsp plain Greek Yoghurt (I used Chobani)
Other Ingredients added to Buddha Bowl:
  • Brown Rice (approx. 1/2-1 cup cooked per person)
  • Spinach ( as much as you like)
  • Green beans & broccoli ( as much as you like)
 

Method

  • Heat a medium sized deep saucepan over the stove and add olive oil
  • Once oil is hot, add chopped mushrooms and stir
  • Once mushrooms are browned, add lentils, black beans, kidney beans, diced tomatoes, passata and Mexican chilli powder.
  • Stir to combine, bring to the boil and then simmer for approx. 20-30mins
  • Whilst the bean sauce is simmering chop and prepare all of the ingredients for your salsa and set aside. Do the same with your guacamole. Wash and chop the green beans and broccoli and either steam or flash fry with a little olive oil and Tamari/soy sauce ( I prefer the flash fry method for more flavour)
  • Cook your brown rice ( or use the 90 second microwave pack if you're impatient like me).
  • Once your bean sauce has been simmering for 20-30 mins, allow it to stand for approx. 10 mins to let it thicken up a little. Then it's just a matter of putting it all together -
   

Pop a good handful of spinach in your bowl, your cooked rice, beans and broccoli, Mexican bean sauce, guacamole and salsa - SO GOOOOOD!!!!
