
A delicious twist on fried rice, I combined both cauliflower and rice to include a bit more veg!
Ingredients
INGREDIENTS:- 2 tbsp. extra virgin olive oil
- 2 chicken breasts
- 1 medium brown onion
- 2 cloves crushed garlic
- 4 tsp. of Moroccan seasoning
- 3 small capsicums (red, yellow and green) or 1 large capsicum (any colour)
- 1 small head of broccoli
- 2 medium carrots
- 1 can of corn (rinsed and drained well)
- 2.5 cups of frozen peas
- 2 cups of uncooked brown rice
- 1 medium head of cauliflower
- 4 tbsp. Tamari (reduced salt soy sauce)
Method
- Place olive oil in pan, cut up chicken into cubes and sprinkle Moroccan seasoning and cook for approx. 12 minutes
- Dice onion up and cook until softened
- Cut up and add the capsicum, broccoli, carrot, corn and peas in with the chicken and cook until veggies are tender
- Break up cauliflower head into small pieces and place into a food processor, blitz until the cauliflower resembles rice
- Cook the brown rice in the microwave for 10-15mins, ratio is 2 cups of rice and 3 cups of hot water
- To cook the ‘cauliflower rice’ – put in a microwave safe bowl and fill with hot water just covering the cauliflower and place in the microwave for 4 minutes to steam
- Place rice and cauliflower into pan with chicken and veggies
- Stir and continue to heat for another 5-10 minutes
- Add your Tamari sauce and stir through – and you’re done!
