An easy and versatile snack, lunch, entrée, side or dinner! The good thing about rice paper rolls is that you can put any veggies or meat you have in the fridge into them!
Ingredients
- 1 Packet rice paper sheets
- 1 Small capsicum
- 1 Small carrot
- 1 Cucumber
- ½ Packet of bean shoots (250grams)
- 1-2 sprigs of Coriander
- 1 damp tea towel
Method
- Thinly slice all of the vegetables into desired length, ready to place straight into paper roll
- Get a fry pan or deep dish that will fit the circumference of the paper rolls, and fill with warm to hot water
- Dampen a clean tea towel with cold water and ring out
- Place one rice paper sheet into the warm water and allow to soften, it will become quite soft and sticky when it is ready to be pulled out.
- Once the sheet is ready, place on the damp tea towel (this prevents it from becoming too sticky and tearing) Now lay your vegetables and meat in the middle of the sheet
- Once you have placed your filling into the sheet, start by rolling one side of the sheet over the filling (enclosing the filling in) and roll 2-4 cms, then fold each end towards the middle and continue rolling.
