I don’t have time to make complex meals, I need to be in and out of the kitchen as quickly as possible, but that doesn’t mean I can’t make a healthy and nutritious meal!
Serves 6-8 people
Ingredients
- 1 medium brown onion
- 1 tsp. extra virgin olive oil
- 1 clove of crushed garlic
- 500gram Lean Beef Mince (Heart Smart 5 star)
- 700grams Passata Sauce (low sodium/low sugar)
- 1 large Zucchini
- 1 large Carrot
- 2 cups of frozen peas
- 1 small red capsicum
- 200 grams of sliced button mushrooms
- approx. 6 medium potatoes
- approx. 1 cup of milk of your choice
- ½ cup low fat grated cheese
Method
- Preheat oven to 180 degrees Celcius
- Place olive oil in saucepan and brown onion and garlic
- Place mince into saucepan and cook until brown
- Add the Passata sauce and stir through
- Cut your veggies (zucchini, carrots, capsicum and mushrooms) up into cubes, and add into the saucepan as well as the frozen peas and allow to simmer for 15 minutes.
- Place the meat and veg mixture into a casserole dish (one that resembles a pie dish) and spread out evenly
- Steam your potato (I like to do it over the stovetop) and once soft take off the heat and mash it up, add milk to give it a smooth, creamy consistency
- Spread the mashed potato over the meat and veg mixture to create a top layer
- Sprinkle grated cheese over the top and place in the oven until the potato and cheese crisps up (approx. 15-20minutes)
