This is a super easy recipe that doesn’t need many ingredients, you could use any leftover vegies from your fridge and it makes for a great meal that can be eaten for lunch or dinner!
- Makes approx 10 Fritters
Ingredients
- 2 x large zucchini
- 1 x carrot
- 2 x eggs
- ¾ cup wholemeal flour
- 1 tablespoon parmesan cheese
- pinch of chilli flakes
Method
- Grate your zucchinis and carrot. After grating, squeeze out excess water in your hands over a sink and then place on some paper towel. Zucchini and carrot holds a lot of water which can be a challenge when getting them to cook so it's important to squeeze out excess fluid!
- Mix all of the ingredients together in a bowl and lightly spray a medium hot pan with extra virgin olive oil. Don’t have the pan too hot or else they will cook on the outside and not in the middle.
- Place the mixture in little balls and flatten out! Cook until golden brown on each side.
- Serve them with a green salad, or add chickpeas or your favourite can of tuna to the mixture for protein. If you need a sauce, find one that is low in salt, sugar and fat, such as a chobani tzatziki dip or reduced salt salsa.
